My mother, who has been key to my love of bread, wanted my sister and I to have a very healthy diet. She baked wholemeal bread every week for our lunch boxes, despite us desperately wanted processed white !
Now, I realise what a trail blazer she was.
These healthy biscuits are hers. Make them, they are great for lunchboxes for children and adults.
Ingredients
100g butter
1 egg
1tsp vanilla essence
one banana ( ideally ripe)
100g light muscovado sugar
100g good wholemeal flour
1tsp baking powder
225g desiccated coconut
50g chopped walnuts
Method
Pre-heat your oven to 180c/160c fan and gas 4.
Cream the butter and sugar together, until blended and smooth. Add the banana and vanilla essence and egg, mix together.
In another bowl (make sure its big enough to mix well) add your flour, coconut, baking powder, chopped walnuts and mix. Add the butter, egg and sugar mixture.
You will have a sticky heavy dough. Wet your hands slightly and weigh out 50g balls of dough and place gently on a lined baking tray. This quantity makes around 8.
Bake in your oven for 15 to 20 minutes. Check at 15 minutes.
Leave on the tray for 10 minutes and then transfer to a rack.
