These are David's favourite.
Ingredients
150g wholemeal flour
150g medium oatmeal
50g sugar
Pinch of salt
Pinch of bicarbonate
90g butter
1 egg
Melted dark chocolate for decoration
Method
Heat your oven to 200c and lightly grease and line two baking trays.
Mix the flour, oatmeal, sugar, salt and bicarb together in a bowl.
Weigh out the butter and cut into small chunks, add this to the dry ingredients.Rub the butter with your fingertips until the mixture resembles coarse sand.
Crack and beat the egg in a separate bowl, add to the mixture.
Stir until it forms a dough. It will be very crumbly.
Dust your work surface with wholemeal flour and using your rolling pin, roll out half the dough to 1 cm thick. Using a 5/6cm cookie cutter, cut our circles and place them on the baking trays. ( They don't spread)
Stick the first tray into the oven for 10 to 12 minutes, while you roll out the other half of the dough. Repeat.
Once they come out of the oven transfer them onto a cooling rack and let them rest before you decorate them with dark chocolate.
You can also just wolf them down as they are, or eat them with cheese for a savoury alternative.
