Coconut was such a huge part of Bedstemor's baking, and she would often make these for all of her grandchildren.
Ingredients
250g sugar
250g desiccated coconut
4 egg whites
100g dark chocolate
Method
These are easy, quick and fun to make. First preheat the oven to 160c / 325f and line two baking trays with baking parchment.
Mix the sugar and coconut together in a bowl. Beat the egg whites until stiff, you can do this by hand if you fancy the work out, or use a beater.
Once the egg whites are stiff, add the sugar and coconut. Using a small spoon, place dollops of the coconut mixture on the tray.
Bake for 10 minutes, and leave on the trays for 5 minutes and then remove to cool completely on racks.
Melt the dark chocolate, and once melted pour into a shallow bowl so that you can dip the coloured macaroons in or pour over with the aid of the back of a spoon.
These are lovely on their own but also great with ice cream.
