Ingredients
300g plain flour
150f icing sugar
300g butter
1 egg white
1 tsp sea salt
150g dark chocolate chips
100g sesame seeds
Method
Mix the flour, icing sugar and sea salt. Then chop the cold butter into pieces and you can either mix by hand or using a mixer with the k-handle. Blend until you have a dough.
Remove from the mixer and put the dough into a bowl. Add your chocolate chips. Mix together by hand or using a spoon.
Roll it into a long log - and wrap in clingfilm and store in fridge for an hour.
Remove from the fridge and weigh out 50g balls. Roll each one in the egg white and then roll in the sesame seeds. It's quite useful to have two little bowls next to each other, as it can be quite messy.
Lay them with space as they do spread on baking parchment. Bake for 10 minutes at 180c.
Keep on the tray, for 5 minutes and then transfer to a rack.
