Æblekage - Danish Apple Cake



Somehow Autumn is upon on us and this easy Traditional Danish Apple Cake is a wonderful cake to make.


Ingredients


200g sugar

225g butter

250g plain Flour

4 eggs

1 tsp baking powder

1/2 tsp salt

2 tsps vanilla essence

6 large apples cored, peeled and slice


Additional Cinnamon Sugar


Method


Butter and line a 23cm cake tin with baking parchment.


Peel, core and slice the apple into think slices. Place these into a bowl with a tablespoon on sugar and a teaspoon of cinnamon and toss them around. Leave while you make the cake mixture.


Mix the butter and sugar together in a magi-mix or with an electrical whisk until light and fluffy. Add the eggs one at a time, with a 30 second interval between each one.


Mix the flour with the baking powder and salt, and add to the butter and sugar mixture.


Place a layer of apples in the bottom of the cake tin. Then add the cake mixture onto. Starting from the centre lay the apple slices in a circular snail like pattern.


Bake in your pre-heated oven at 180 degrees for 1 hour and then cover in silver foil and bake for another 15 minutes.


Enjoy with vanilla ice-cream, on its own or with some creme fraiche.
